Buffets

• Spring Salad: Spring mix, tomatoes, and multicolored carrots lightly dressed with our poppy seed dressing and served with warmed bacon
• Pecan Cranberry Salad: A mix of greens, toasted pecans bacon and cheddar cheese lightly dressed in our poppyseed dressing
• Ceasar Salad: Crisp romaine lettuce, hardboiled egg and shaved parmesan cheese lightly dressed in a traditional Creamy Ceasar Dressing
• Simple Garden Salad: Crisp iceberg and romaine lettuces, tomatoes cucumber and shredded carrots.  Served with a variety of dressing including a homemade Ranch.

Chicken

• Grilled Herbed Chicken Breast: Chicken breast rubbed with olive oil and Herb De Provance. Simple and delicious.
• Chicken Marsala: Chicken breast lightly dredged in flour, pan seared and smothered in a traditional Marsala Wine Sauce
• Chicken Picatta: Chicken breast lightly dredged in flour, pan seared and smothered in a lemon butter sauce and capers.
• Pecan Crusted Chicken: Chicken Breast encrusted with sweetened pecans and panko and baked to a crispy delicious crunch.
• Tequila Lime Chicken: Chicken breast marinated overnight in a blend of tequila, lime juice and garlic then grilled to perfection.

Pork

• Pork Tenderloin Robert: Pork tenderloin roasted in a traditional finished brown mustard sauce made with onions, mustard, and white wine simmered in a basic demi-glace.
• Pecan Crusted Pork Loin: Pork tenderloin rubbed Dijon mustard and covered with mixture of finely ground pecans select herbs.  Finished with a light bourbon sauce.
• Bacon Wrapped Pork Loin: Pork Loin seasoned and wrapped in bacon. Baked to golden brown and garnished with rosemary.

Beef

• Tenderloin Kabobs: Marinated beef tenderloin, mushrooms, onion and green pepper skewers grilled to perfection.
• Meatloaf Stack: Beef mixed with breadcrumbs and seasoning topped with beef glaze and stacked with onion tanglers. Baked until golden brown.
• Beef Tenderloin: Smokey seasoned Tenderloin grilled to perfection.  Served medium
• Italian Pot Roast: Pot Roast slow roasted in Italian seasonings until tender and juicy.
• Braised Beef Burgandy: Beef Sirloin dredged and simmered with fresh vegetables until tender

Fish

• Lemon & Dill Salmon: Fresh Salmon baked until flakey and severed with a lemon dill sauce.
• Tri Colored Salmon: Fresh Salmon brushed with lemon butter and baked. Drizzled with a honey mustard sauce. Topped with a cheesy seasoning
• Breaded Fantail Shrimp: Deep fried till golden brown and served with cocktail sauce.
• Tilapia w/ Herb Cream Sauce: Baked tilapia finished with a creamed sauce accented with a blend of herbs and horseradish.

Vegetarian Entrée

• Stuffed Acorn Squash: Half an acorn squash stuffed with rice, onion and dried cranberries then slightly sweetened and roasted.

• California Blend : A blend of fresh baby carrots, broccoli and cauliflower lightly salted and steamed.
• Fresh Steam Green: Fresh Green beans steamed until tender and lightly salted.
• Candied Baby Carrots: Fresh carrots steamed until tender served in sweet, caramelized sauce.
• Roasted Brussel Sprouts with Balsamic Glaze: Fresh Brussel sprouts lightly tossed in olive oil, salt and pepper, roasted until golden brown and lightly brushed with balsamic vinegar sauce.
• Oven Roasted Rainbow Carrots: Fresh rainbow carrots drizzled with olive oil, salt and pepper then roasted until tender.
• Grilled Zucchini & Summer Squash: Fresh Zucchini and Summer Squash seasoned and grilled until tender.
• Roasted Garlic Broccoli: Fresh broccoli tossed in olive oil and garlic and roasted.
• Mexican Street Corn: Fresh corn on the cob beautifully charred and dressed in a creamy lime mayo with parmesan cheese and cilantro.
• Grilled Asparagus: Fresh seasoned asparagus lightly brushed with olive oil and char grilled until crisp tender.
• Lemon Pepper Almond Green Beans: Fresh green beans sauté in butter and almonds then seasoned with lemon pepper.
• Bourbon Bacon Brussel Sprouts: Fresh Brussel sprouts lightly tossed in olive oil, salt and pepper, roasted until golden brown then tossed in  bourbon bacon jam.

• Garlic Redskin Mashed Potatoes: Creamy and fluffy mashed redskin potatoes bursting with garlic flavor.
• Roasted Tri-color Medley Potatoes: Roasted tri-colored potatoes lightly tossed in olive oil and sprinkle with salt, pepper and rosemary.
• Redskin Potato in a Parsley Butter: Fresh redskin potatoes steam until tender and tossed in butter and fresh parsley.
• Yukon Gold Mashed Potatoes: Perfectly simple mashed Yukon golden potatoes.
• White Rice with Cilantro and Lime: Tender and fluffy rice with lime juice and cilantro.
