Easy Mexican Casserole
Ingredients
- 1 pkg. Doritos or taco chips, crushed
- 1 lb. ground beef
- 1/2 c. milk
- 1/4 c. onions, chopped
- 1 can (15 oz.) tomato sauce
- 1 c. minute rice
- 2 tbsp. green pepper, chopped
- 1/4 tsp. chili powder
- 1/2 c. shredded Cheddar or taco cheese
- Salt & pepper

Directions
Preheat oven to 350 degrees. Layer pan with taco chips. Layer beef on
top of chips. Lightly salt and pepper. Mix remaining ingredients except
cheese in a bowl and pour over beef. Bake for 30 minutes, top with cheese
last 4 minutes.
Wet Burrito Bake
Ingredients
- 1 lb. ground beef
- 1/2 medium yellow onion chopped
- 1 pkg. taco seasoning
- Flour tortillas
- 1 can refried beans
- 2-3 C. shredded mild cheddar cheese
- 1 can cream of mushroom soup
- 8-oz. carton sour cream, divided

Directions
Brown hamburger and onions; drain. Add taco seasoning (prepare as directed
on taco seasoning package). Add refried beans. Mix soup with 4 ounces
of sour cream. Spread enough of the sour cream mixture to cover the bottom
of a casserole dish. Put meat into tortillas. Wrap like a burrito and
place seam side down in casserole dish. Put the remaining sour cream on
top of the
burritos. Sprinkle cheese over top and bake, uncovered, at 350 degrees
F. for 20 to 30 minutes. You can garnish with chopped green onions, chopped
tomatoes, remaining sour cream, and picante sauce if you like.
Chimichangas
Ingredients
- 2 to 2 1/2 lbs stew beef
- 3 cloves garlic, minced
- 1 1/2 tsp cumin
- 3 Tbsp chili powder
- 1 onion sliced
- 1 tsp salt
- 1/2 tsp pepper
- 6 flour tortilla

Directions
place meat and seasonings in large saucepan or dutch oven. add enough
water to cover meat and simmer covered, about 2 hours until meat is tender.
reserve broth. shred meat. moisten meat with 1/2 c broth.
heat tortillas in oven (wrap in foil, bake 350* for 15 min). place
3 to 4 tbsp meat on each tortilla. fold tortilla - sides over, then top
and bottom. heat about 1 inch of oil in skillet to 350. fry filled tortillas
2 or 3 at a time for 1 min on each side till golden. PLACE SEAM SIDE DOWN
FIRST WHEN FRYING to help hold it together. serve on a bed of chopped
lettuce. top with sour cream, guacamole and salsa.
