PROFESSIONAL ACTIVITIES AND AREAS OF INTEREST:

Professor Briggs teaches courses in Restaurant & Food Industry, Private Club and Hotel Management ranging from Noncommercial Food Service Operations to Menu Planning & Nutrition, World Cuisines, Property Management, and Front Office Procedures/Accounting. Prior to teaching, she worked for a number of companies across the country in restaurants, institutional food service, resorts, and hotels including Yellowstone, Grand Canyon, and Grand Teton National Parks.

Professor Briggs attended the New England Culinary Institute and apprenticed with Chef Larry Edwards of the Chico Hot Springs Hotel. She has remained current with industry trends through sabbaticals, summer employment, conference attendance and military travel. She is the Faculty Advisor to the Ferris Student Chapter of the Club Managers of America Association and active member of the Michigan Club Managers Association. Professor Briggs has been at Ferris since 1988.
