Ingredients

  • 15 oz canned black eyed peas
  • 15 oz canned black beans
  • 15 oz canned yellow corn
  • 15 oz canned garbanzo beans
  • 1 medium green pepper(s)
  • 1 medium yellow pepper(s)
  • 1 medium sweet red pepper(s)
  • 1 medium onion(s)
  • 1 cup SPLENDA No Calorie Sweetener
  • 1/2 cup olive oil
  • 3/4 cup apple cider vinegar
  • 1/4 tsp table salt
  • 1/4 tsp black pepper

 

Instructions

  1. Rinse and drain beans and corn.
  2. Chop peppers and onion.
  3. Mix vegetables together in a container.
  4. In a microwave container, mix sugar, olive oil, cider vinegar, salt and pepper.
  5. Heat in microwave for 3 minutes. Stir.
  6. Pour over vegetables.
  7. Refrigerate overnight.
  8. Serve with Tostitos Scoops.
