Ingredients
- 15 oz canned black eyed peas
- 15 oz canned black beans
- 15 oz canned yellow corn
- 15 oz canned garbanzo beans
- 1 medium green pepper(s)
- 1 medium yellow pepper(s)
- 1 medium sweet red pepper(s)
- 1 medium onion(s)
- 1 cup SPLENDA No Calorie Sweetener
- 1/2 cup olive oil
- 3/4 cup apple cider vinegar
- 1/4 tsp table salt
- 1/4 tsp black pepper
Instructions
- Rinse and drain beans and corn.
- Chop peppers and onion.
- Mix vegetables together in a container.
- In a microwave container, mix sugar, olive oil, cider vinegar, salt and pepper.
- Heat in microwave for 3 minutes. Stir.
- Pour over vegetables.
- Refrigerate overnight.
- Serve with Tostitos Scoops.
