Jell-O Poke Cake

Set your oven to 350 F. Prepare pan to keep cake from sticking by lightly coating bottom of pan with cooking spray.

Ingredients:

1-Pillsbury Moist Supreme Classic White Cake Mix
1 ¼ Cups of Water
4 Egg Whites
2 ½ Tbls oil
2 ½ Tbls unsweetened applesauce (substituted for an additional 2 ½ Tbls oil to reduce calories and fat content)

Instructions:

Blend cake mix, water, egg whites, oil and applesauce in a large bowl until moistened. Beat with a mixer on low speed for 2 minutes.

Bake in a 9 x 13 inch pan for 30 to 35 minutes. When toothpick inserted in the center comes out clean, your cake is done.

1 small package sugar free jell-o (your favorite flavor) Prepare as directed on package but decrease the cold water to ½ cup.

To poke holes in the cake use something about the size of the small end of a chop stick. Poke holes in the baked cake about ½ inch apart. Pour/Drizzle the jell-o into the holes. (A cup with a spout or a baster works well). Refrigerate.

Prior to serving spread Fat-Free Cool-Whip over the top.
