Banana Split
Ingredients:

  • 16 Graham cracker squares, finely crushed
  • 1 Large pkg. Sugar-free vanilla flavored instant pudding mix
  • 3 Cups 1/2% milk
  • 3 Bananas, sliced
  • 1 (8oz) Carton "fat free" whipped frozen topping, thawed
  • 2 Cups sliced fresh strawberries
  • 2 (8oz) Cans crushed pineapple, drained
  • 4 oz. Flaked coconut

 

Instructions:

  1. Spread cracker crumbs evenly in a 13 X 9 inch pan.
  2. In medium bowl, mix pudding with milk according to directions on package (I reduced the amount of milk to 2 ¾ cups for a firmer filling). Pour over crumbs and chill.
  3. Layer sliced bananas over pudding. Cover with whipped topping.
  4. Add layer of strawberries, then pineapple. Sprinkle with coconut. Refrigerate until serving. Yield 9 generous servings.
