Brenda Walton, as a Registered Dietitian, coordinates the
special diet needs of students and customers of the Dining
Services Staff. She provides nutrition counseling services
for all Ferris State University students and staff, and
takes referrals from Birkam Health Center and Counseling
Center. She also serves as a consultant for nutrition and
health-related concerns to the Dining Services staff.
With a goal of promoting Health and Wellness on campus,
she is available for presentations on a variety of nutrition-related
topics for Ferris athletic teams, residence hall programs,
and in the classroom setting. She promotes good nutrition
and healthy choices for customers within the Dining Centers,
makes recommendations for new menu items and recipes, and
provides nutrition analysis of menus for the Dining Services'
Website and Nutrition Search Database.
Brenda facilitates RFIM 227 Industry Practicum for students
in the Hospitality Programs. She serves as coordinator and
mentor for an eight-week National Association of College
and University Food Service Management Internship for qualified
college students. The interns learn and practice the various
aspects of dining services/catering services management
within the University-setting.
She is an active member of the American
Dietetics Association, Michigan Dietetic Association, Dietitians
of West Michigan, including the Diabetes Care and Education
Practice groups.
